| Spiced Barbecue Ribs (Serves 4) |

Marinating Time: 3 to 4 hours

| Method:
Using a sharp knife, cut the meaty sides of the ribs through to the bone in a lattice pattern. This lets the marinade penetrate, tenderizes the meat, and quickens cooking. Place the ribs in a dish.
Mix together the remaining ingredients, except the toasted sesame seeds, and pour over the meat. Stir to mix, then cover and leave for at least 3 to 4 hours, preferably overnight.
Preheat the barbecue. Lift the meat from the marinade, and grill the beef, brushing occasionally with the marinade, until it is a rich golden brown. This should take approximately 12 to 15 minutes on each side. Serve hot, sprinkled with sesame seeds.

| Ingredients:

- 2 lb beef short ribs, cut into 3-inch lengths
- 1 Tbsp crushed toasted sesame seeds (see tip below)*
- 4 Tbsp soy sauce
- 4 scallions, white parts only, sliced and crushed
- 3 garlic cloves, crushed and finely chopped
- 1 ½ Tbsp sesame oil
- 1-inch piece of fresh ginger, shredded
- 2 tsp sugar
- Freshly ground black pepper
- Toasted sesame seeds, to taste
*Tip: Toast the sesame seeds in a dry pan until they begin to pop - in about 1 minute. Crush lightly with pestle and mortar
