The grill is integral to summer, and we at Vector Technical wanted to provide our readers with something a little different, so enjoy this spicy recipe with your family and friends!
Spiced Barbecue Ribs (Serves 4)
Preparation Time: 10 minutes
Marinating Time: 3 to 4 hours
Cooking Time: 30 minutes
Method:

Using a sharp knife, cut the meaty sides of the ribs through to the bone in a lattice pattern. This lets the marinade penetrate, tenderizes the meat, and quickens cooking. Place the ribs in a dish.

Mix together the remaining ingredients, except the toasted sesame seeds, and pour over the meat. Stir to mix, then cover and leave for at least 3 to 4 hours, preferably overnight.

Preheat the barbecue. Lift the meat from the marinade, and grill the beef, brushing occasionally with the marinade, until it is a rich golden brown. This should take approximately 12 to 15 minutes on each side. Serve hot, sprinkled with sesame seeds.
Ingredients:
  • 2 lb beef short ribs, cut into 3-inch lengths
  • 1 Tbsp crushed toasted sesame seeds (see tip below)*
  • 4 Tbsp soy sauce
  • 4 scallions, white parts only, sliced and crushed
  • 3 garlic cloves, crushed and finely chopped
  • 1 ½ Tbsp sesame oil
  • 1-inch piece of fresh ginger, shredded
  • 2 tsp sugar
  • Freshly ground black pepper
  • Toasted sesame seeds, to taste *Tip: Toast the sesame seeds in a dry pan until they begin to pop - in about 1 minute. Crush lightly with pestle and mortar
